PROGRESS FOR FOOD PROCESSING

Nutritionally valuable raw materials are not only a source for the supply of macro and micro nutrients (protein, carbohydrates, fat, minerals, vitamins). They are also rich in bioactive ingredients (AFI) such as antioxidants, phytosterols or dietary fibre.

The human body can often hardly benefit from such ingredients because they are “locked up” in the raw materials. And not only is the bioavailability low, but in most cases the consumption of these raw materials is not very enjoyable.

To overcome these disadvantages ABAC R&D has developed a groundbreaking technology, the HCT. A suspension of the raw material in water is mechanically treated until a stable mixture of soluble, emulsified and suspended components is formed (hetero-colloid). Due to the highly efficient comminution of the rigid structures, the availability of the bioactive ingredients is significantly increased compared to whole or dry ground raw materials. The interface for mass transfer in the intestine is massively increased. All other bioactive ingredients contained in the raw material become fully accessible for human health. HCT therefore turns even raw materials with a rigid structure and high oil content into complete foods.

Glucan Particle Technology (GPT)

ABAC R&D isolates the microfibres of beta-glucan from baker’s yeast using the patented manufacturing process of Glucan Particle Technology (GPT). The activation of the intestine-associated immune system is therefore optimal. GPT is also suitable for the isolation of other bioactive components from yeast or other microbial raw materials such as Aspergillus niger, the by-product of citric acid production.

PROGRESS FOR THE ISOLATION OF BIOACTIVE INGREDIENTS (AFI)

The basic principles of GPT were developed in the isolation of glucan from yeast cell walls. This approach turned out to be advantageous for the development of an actual technology platform by enriching different isolates from yeast cell walls as well as by using other suitable raw materials. The process meets the following basic requirements:

  • Enrichment of the target components as high and cost-effective as possible
  • Enrichment of various bioactive components from the starting material
    Cell walls are usually composed of several soluble or particulate polysaccharides and polysaccharide-protein complexes. Our advanced technology allows the isolation of the commercially interesting components.
  • Preservation of the natural structure and composition
    The starting materials usually have a layering with amorphous areas on the outside and crystalline areas on the inside. Since both structure and composition are crucial for maintaining the target functions, these should not be affected by the insulation technology.
